Two Tiered Topsy-Turvy - Ms Dahlia

However, the two tiered cake overall appearance was not to bad, even though there's an inclination for me to use RED to enhance the overall look of the cake but I would feel guilty if I did not comply with her requirements. The cake was adorned with dropping dahlias with baby booties toppers.The baby booties was brushed with edible pearl pink luster color, it looks really cute and very pretty.

Topsy Turvy , Wedding Cake - Carnival Theme


I was commissioned to do a wedding cake with a carnival theme. My first impression it must have bright primary colors, like a funfare. The client e-mailed a few photos to have some ideas what were in their mind. Some of the  photos shows more like a children party cake. I wanted to do something that colorful, yet it also looks like a wedding cake.
A few sketches been e-mailed to the client and there’s a few minor amendmends need to be done. There should be no floral motifs or curlie shapes on the cake.
Eventually, I finalized the sketches and basically was satisfied with the outcome.
During the decorating process, I have to made a few more minor adjustment. To make it more elegant I added edible gold dust and painted on sheen colors on a few areas to enhance the overall look of the cake.
The dress code for the guest were black and white.
The cake was placed on a bale of hay.

Annual Wedding Cake Competition 2010

The Annual Wedding Competition was held on 30-31 October 2010. Organized by International Centre of Cake Artistry's (ICCA).  This was my first time entering into this competition. Coincidently and unfortunately, this was  the time where I had many orders to fulfill. The winner of the competition had many experiences in entering his pieces at international level, so experinces and knew very well of the judges expectations was very crucial. Factors like design, skills and execution was part of the marks given.Eddie Spence was one of the judges. Below a few photos taken during the competition.

My entry - Comments from Judges - poor execution, design - quite good, color scheme - should be more brighter. Compare with other competitor - I'm far behind, need to practice more.

Topsy Turvy Cake




I've attended the 3 days Wedding Cake Classes at ICCA, Dataran Sunway. This was the product that I design using all the technique that had been taught. Anyway there’s been a lot of mistake that I’ve done and many lesson learned. Nevertheless it has been quite good learning experience for me.

Topsy Turvy Cake


My colleague sponsored these cakes for her friend for Hari Raya Gathering (I guess). She wanted something different so I suggested these cakes. The bottom tier was 8 inch, middle 6 inch, top tier 4 inch overall height 10 inch. This type of cake is also called wonky cake or a Mad Hatter cake. Construction of this type of cake is easy once you know the technique.
I practice my first topsy turvy cake with Styrofoam, I succeeded. However, when I do with a real cake, it was a disaster!!, I couldn’t fit the second tier properly and it just collapsed, it turned into a real “TOPSY TURVY”. I realized carving the cake with the correct angle is crucial and the cake must firm enough during carving so it will not be out of shape.
Yet the cake that looks unsightly was consumed by my hungry friends in the office. The taste must be good!!!!!
